Chickpea Crisp Noodles

Ingredients

Chickpea powder  500 gm
Ajwain                   3 gm
Red chillies             3
Oil                     300 gm
Salt to taste


Take the chickpea powder in a bowl, heat the oil in a pan and add half a cup of oil to the dry chickpea powder. [Turn the stove to Sim, low heat. and leave the pan of oil there. We will use it to fry the Chickpea noodle later.]

Mix the oil and the powder thoroughly. Leave it aside for a  minute.

Powder the ajwain and red chillies in a mixer grinder. When they are powdered well add a spoonful of water and churn them again. Grind them to a paste.

Now add the paste to the chick pea powder and mix a little water. Do not add too much water. It shoul dbe possible for you to hold the mixture in hand and roll it like a cricket ball.

A special machine is used to make very thin noodle like shapes.  Take a little of this chickpea ball, put it in the machine and squeeze it in the pan of oil. Make a very thin thread like shape. The threads stick together to form a circular or oval shape.

Use a perforated laddle to turn the noodle back and forth.  Deep fry it on both sides.  Then remove it carefully draining the oil with the help of the perforated spoon and the sides of the pan.

Now the crisp chickpea noodles, om podi, is ready to eat.
